To delete stuff from the card "on" the camera -- I assume you mean without attaching it to a computer -- you need to use that little viewer thing that was included. Attach it to the back of the camera with the power off, start up, and you can review and delete videos from there. Which button does what was explained in the manual.
As for setting the date... well, googling that question led me here, and I haven't found a solution yet.
