I made fudge for the first time! It turned out to be easy and yummy. Used mostly chocolate chips, with one cup of peanut butter chips. Not the semi-sweet ones. I make cake and brownies often, and will add this recipe to my favorites.
Fudge recipe
3 C. (18 oz.) semi-sweet chocolate chips
14 oz. can sweetened condensed milk
Dash salt
1 1/2 t. vanilla
1 C. chopped walnuts
In heavy saucepan, over low heat, melt chips with sweetened condensed milk and salt. Stir often.
Remove from heat; stir in walnuts and vanilla.
Spread evenly into wax paper lined 8- or 9-inch square pan. Chill 2 hours or until firm.
Turn fudge onto cutting board; peel off paper and cut into squares.

A yummy brownie, a big one! Only two pieces left in the pan.

Never knew about canned pumpkin until I read this. Wonder what that tastes like? Applesauce is supposed to be another replacement for oil and/ or eggs. Did you make some brownies yet?

Made home made lasagna for dinner last night. Scrumptious!

I think dinner will be ants on a branch.
I really should figure lunch out first, though. Probably a bowl of potato soup, leftover from dinner last night.

Think tonight will be black bean chili. Going to depend on if I can find the stove or not...
Lunch was baked acorn squash with butter and a little brown sugar. So yummy!

I have a Tuscan potato soup recipe that I need to make at some point. I love potato soup, but just haven't mastered soup making. Need more practice!
